INGREDIENTS:
-1000 gr flour
-50 gr of yeast
-300 gr of salted anchovies
-salt
- frying olive oil
PREPARATION:
Place the flour in a glazed terracotta pot with flared sides (bavanu), add
the yeast dissolved in warm water, a pinch of salt and knead. Knead
the flour by adding warm water until the dough becomes very
soft; continue for about half an hour beating the dough
until the mixture is stringy. Cover with a cloth and let rise
for four or five hours. Meanwhile remove the bones of the anchovies, clean
them well and chop them. When the dough is leavened, put
abundant olive oil in a pan, then grease your hands with oil,
and with them scoop some dough; stretch it, put a piece of anchovy
in it and drop it in the hot oil. They are served hot.
